Newsletter #14 - Creative and Constructive
** This past month students from the Land Arts of American West (https://landarts.unm.edu) came from the University of New Mexico to visit El Coronado Ranch. On a walk-about they saw little dams, loose rock structures, built throughout the hills. In the washes they saw massively large rock structures (known as gabions). The structures large and small had filled in with dirt behind them, and wherever there was a dam the soil was moist. Underfoot the soil was like a sponge.

Now you’ve heard of a Victoria Sponge, a Lemon Sponge or even a Chocolate Sponge. But please let me introduce to you, the ancient sponge, indeed the mother sponge, the sponge that was perceived to be no more, but a sponge that is making a comeback right here in the Chiricahua Mountains, and is about to sweep across the United States. And don’t worry people this sponge won’t make you pile on the pounds, on the contrary this sponge is already being dubbed the superfood of 2019, and indeed for the rest of time, trust me the health benefits are monumental. Yes, ladies and gentlemen I give you, The Soil Sponge! Or as it is also known, ‘spongey soil’.
Look I know what you’re thinking, “that dry and grainy sediment that falls through my fingers like sand through a Siv? That kicks up when I walk and coats the back of my throat?”
Yes! People today I will share with you the recipe to turn that silty powder into a sponge that will rival any of the sweet treats found in your local Whole Foods bakery section. But let me tell you the best bit, if you carry out these steps correctly, your sponge will stay moist, all year round.
Step 1: Gabion Construction!
Okay first you are going to assemble our dry ingredients, which is going to take the form of rocks and lots of them! (The odd stick is also welcome). Gather help from some willing people, persuade them with the assurance that their children will have a reliable source of food beyond the age of thirty. Once everyone is on board you are going to leave your decrepit soil alone and instead look at it carefully, read the land and see where it comes from. It should lead to a wash, dry this time of year, that leads up to the top of your mountain. Now, you are going to follow the wash and scale the mountain, with your trusty team and your valiant dry ingredients, I didn’t say this would be easy but trust me the results are delicious!
At the top of the mountain you are ready to assemble your dry ingredients into Gabions! Where they will shortly be introduced into our wet ingredient. Gabions are dam-like structures constructed from the rocks and placed across the wash. At the top of the wash where it is the steepest, each gabion should reach up to the bottom of the one that is ahead of it. As you descend the mountain the space between the gabions should widen as the gradient of the mountain softens. Once all the gabions are in place, we are ready to introduce our dry ingredients to our wet ingredient!
Step 2: Water!
As the monsoon and winter rains come, our water will then, mingle and integrate with our carefully placed gabions. And THIS is where the magic will happen…eventually, because my friends this does not happen overnight. You are going repeat this process for up to six years, building and rebuilding the gabions and introducing them to the water. Hey I didn’t say it would be quick but trust me the results are really, really important.
After six or so years your gabion constructing ability will be masterful and the aging process that has undergone between your dry and wet ingredients will have resulted in a harmonious and homogenous relationship, and water will be slowed down by the gabions but still pass through. Filtering the water of sediment and allowing it to trickle into avenues that have not seen moisture in years!
Step 3: See and feel your results!
The water will permeate the land running along the wash and most importantly into the starved soil, and before long the fruit of your labor will begin to show. Your soil will start to become soft and tacky and then right before your eyes and your hands, you will discover the wonder of spongey soil, or the Soil Sponge.
Once these steps have been taken your Soil Sponge is going to be the perfect nutritious delight for your neighbors to marvel at. But crucially after cultivating your sponge, and this is the curveball, don’t eat it! Because do you know who really enjoys it? Native perennial grasses like Hairy Grama, Blue Grama, Giant Sacaton among so many more which will provide a strong and healthy root structure amidst your spongey land! Yes, this sponge is a gift of nutrition, let it absorb and replenish the surrounding landscape, creating a diverse and vibrant environment. Allowing plant life to thrive and eventually feed your belly and your soul!
We are playing the long game here people!

El mes pasado, recibimos a un grupo de estudiantes de la escuela de Artes de la Tierra del Oeste de América, (Land Arts of American West) que venían de la Universidad de Nuevo México, a visitar el Rancho El Coronado. Salimos a Dar un paseo y en una caminata vieron pequeñas presas, estructuras de rocas sueltas o trincheras como también le llamamos, construidas a lo largo de las colinas. En los arroyos vieron estructuras de roca de tamaño considerable (conocidas como gaviones). Las estructuras grandes y pequeñas se habían llenado de tierra detrás de ellos, y donde había una presa el suelo estaba húmedo. Bajo los pies, el suelo era como una esponja.

Seguramente has oído hablar del pastel esponjoso victoriano, un pastel de limón o incluso un pastel de chocolate. Pero permítanme presentarles a ustedes, el mas antiguo pastel, de hecho, el pastel madre, el pastel que se percibe que ya no existe, sino una pastel que está regresando aquí mismo en la sierra de Chiricahua, y está a punto de extenderse a Estados Unidos. Y no se preocupe, gente, este pastel no lo hará aumentar de peso, por el contrario, a este pastel ya se la conoce como el superalimento de 2019, de hecho, por el resto del tiempo; confíe en mí, los beneficios para la salud son monumentales. ¡Sí, damas y caballeros, les presento el pastel de suelo! O como también se le conoce, "suelo esponjoso".
yo, sé lo que estás pensando, "¿ese sedimento seco y granulado que cae entre mis dedos como arena a través de un cernidor? ¿Eso se levanta cuando camino y me da carraspera en mi garganta?”
Si! Hoy compartiré con ustedes la receta para convertir ese polvo limoso en un pastel que rivalizará con cualquiera de los dulces que se encuentran en la sección local de panadería. Pero déjame decirte lo mejor, si sigues estos pasos correctamente, tu pastel se mantendrá húmeda durante todo el año.
Paso 1: Construcción del gavión!
Bien, primero vas a juntar los ingredientes secos, ¡en este caso serán las rocas y muchas de ellas! (las rama secas de forma extraña también es bienvenidas). Reúna la ayuda de algunas personas dispuestas, debes de persuadirlos con la seguridad de que sus hijos tendrán una fuente confiable de alimentos después de treinta años. Una vez que todos estén a bordo, dejarás tu suelo se sedimente solo y, en cambio, míralo con cuidado, lee la tierra y ve de dónde viene. Debería llevarte a un arroyo, seco en esta época del año, que conduzca a la cima de la montaña. Ahora, vas a seguir el arroyo y escalar la montaña, con tu equipo de confianza y tus valientes ingredientes secos, no dije que esto sería fácil, pero confía en mí, ¡los resultados son deliciosos!
¡En la cima de la montaña estarás listo para juntar tus ingredientes secos en gaviones! En donde pronto serán introducidos en nuestro ingrediente húmedo. Los gaviones son estructuras similares a presas construidas a partir de las rocas y colocadas a través del arroyo. En la parte superior del arroyo, donde es más empinado, cada gavión debe llegar hasta el fondo del que está delante de él. A medida que desciende la montaña, el espacio entre los gaviones debe ampliarse a medida que el gradiente de la montaña se ablanda. Una vez que todos los gaviones estén en su lugar, ¡estamos listos para presentar nuestros ingredientes secos a nuestro ingrediente húmedo!
Paso 2: ¡Agua!
A medida que lleguen las lluvias del monzón y las nieves de invierno, nuestra agua se mezclará e integrará con nuestros gaviones cuidadosamente colocados. AQUÍ es donde sucederá la magia…eventualmente, porque amigos esto no sucede de la noche a la mañana. Repetirás este proceso hasta por seis años, construyendo y reconstruyendo los gaviones y presentándolos al agua. Oye, no dije que sería rápido, pero confía en mí, los resultados son muy, muy importantes.
Después de aproximadamente seis años, tu capacidad de construcción de gaviones será magistral y el proceso de envejecimiento que ha sufrido tus ingredientes secos y húmedos habrá dado como resultado una relación armoniosa y homogénea, y los gaviones ralentizarán el agua, pero aun así pasará. ¡Filtrando el agua del sedimento y permitiendo que gotee en avenidas que no han visto humedad en años!
Paso 3: ¡Mira y siente tus resultados!
El agua penetrará la tierra que corre a lo largo del arroyo y lo más importante en el suelo muerto de hambre, y en poco tiempo el fruto de tu trabajo comenzará a verse. Tu suelo comenzará a volverse suave y pegajoso y luego, justo delante de tus ojos y tus manos, descubrirás la maravilla del suelo esponjoso o la tarta de suelo.
Una vez que se hayan tomado estos pasos, tu pastel de suelo será la delicia nutritiva perfecta para que tus vecinos se maravillen. Pero crucialmente después de cultivar tu pastel, y esta es la bola-curva, ¡no te la comas! ¿Porque sabes quién realmente lo disfruta? ¡los pastos perennes nativas como el banderita velludo el navajita común o el zacatón alcalino , entre tantas otras especies de pastos que proporcionarán una estructura con sus raíces fuerte y saludable en medio de su suelo esponjoso! Sí, esta esponja es un regalo de nutrición, deja que absorba y reponga el paisaje circundante, creando un ambiente diverso y vibrante. ¡Permitiendo que la vida de las plantas prospere y eventualmente alimente tu vientre y tu alma!
¡Estamos jugando el juego largo aquí, gente!
